Day 27 = Resistance Bands + Chicken and Rice

Looking back on my childhood, I wouldn't say my mom was much of a gourmet. I've totally surpassed her at busting out great meals, but my mom does have some sweet recipes up her sleeve that she pulls out. Chicken Chip Bake, Shrimp Dip and one of my special favorites, Chicken and Rice Casserole. By the way, all of these are from the Better Homes and Gardens red-checkered cookbook from the 1970s. Tonight I tried to make that chicken and rice and I can never replicate it. Happy mom? You got me beat on that one.

Since I could not find a photo that does mom's chicken and rice casserole justice, I will revert to this other memory. When I was a kid, I had the Maurice Sendak book, "Chicken Soup with Rice" and it came with a song by Carole King. I recently downloaded the song and burned it to a CD and bought a new book and sent it to my friend's daughter. I need to pass on that tradition. I actually have another copy myself and one day (God willing) I will pass on that story to my kids. In fact, I've been collecting books for these future kids of mine for over 10 years now.

In the meantime, I did a workout with the resistance bands. Kind of like a "rest day" but not since I actually made an effort.
